Carlos is the owner of Carnitas Michoacan, located in what locals refer to as a corridor mainstay, Plaza Fiesta. Carlos recalls the good ole days, before the pandemic, when the city’s center was packed with locals and visitors getting a taste of Mexican foods, music, and celebrations.
